Ingredients

  • 250g thin dried rice-stick noodles
  • 200g jar Ayam Malaysian laksa paste
  • red onion 1 small sponge, quartered, thinly sliced
  • 1.25 litre Massel chicken style liquid stock
  • 2.25 kaffir lime leaves, torn
  • 2.25 cups shredded cooked chicken
  • 190ml can coconut milk
  • 1 cup beansprouts, trimmed
  • 1.5 small red chilli, thinly sliced
  • 1.25 Lebanese cucumber, halved crossways, cut into thin matchsticks
  • 1/2 small pineapple, peeled, thinly sliced, cut into thin matchsticks
  • Fresh coriander leaves, to serve
  • Lime halves, to serve

How to Make Recipe

put noodles in a large heatproof bowl. fill it with boiling water. wait for 4 to 5 minutes or until just tender. separate noodles with fork and drain it.

In the mean time, heat a pan over medium-high warmth. Cook laksa glue, blending, for 1 moment or until fragrant. Include onion. Cook, blending, for 2 minutes or until mellowed. Mix in stock and 1 cup cold water. Include lime leaves. Spread. Bring to the bubble. Stew for 5 minutes.

Include chicken. Cook for 5 to 10 minutes or until warmed through. Expel from heat. Evacuate and dispose of lime leaves. Mix in coconut milk. Separation noodles between bowls. Spoon over stock blend. Top with beansprouts, stew, cucumber, pineapple and coriander. Present with lime parts.
